Minamigura's Sato no Aji miso paste uses only the highest-quality domestic Japanese ingredients.
They combine whole soybeans from their home in Aichi prefecture, with natural Japanese sea salt to create a unique and rich miso. The ingredients are fermented and aged in 145-year-old wooden barrels for three years, which aids in developing a rich and mellow taste, that can't be replicated by a grocery store miso paste.
This tsubu miso contains only two, natural ingredients: soybeans and salt, and zero chemical seasonings or preservatives.
Tsubu miso is a "chunky" version of miso paste, which has a rustic texture due to the remaining pieces of soybean that haven't been completely ground down into the mixture. You can feel the added texture as you eat it, along with a stronger flavor of soybean.
