Sukiyaki is one of Japan's most popular styles of hot pot. Sukiyaki sauce, often called warishita, is a perfect blend of seasonings like soy sauce and mirin that was purposefuly balanced to enhace the hot pot ingredients. Simmer beef, vegetables, tofu, mushrooms and more in this sauce for an incredibly rich, authentic sukiyaki experience.
This particular sukiyaki sauce was made by slowly simmering thick shavings of bonito and finishing with a twice-brewed (saishikomi) soy sauce. This creates an incredibly deep and rich flavor that pairs extremely well with meat. By using this sukiyaki sauce you can truly enjoy the outstanding aroma and flavor of real, high-quality Japanese bonito flakes (katsuobushi).Â
Mix one part Kyuemon sukiyaki sauce with one part water to form the basis of the sukiyaki broth. Gently simmer beef, vegetables, and other ingredients in the broth until cooked.
