This furikake from Matsuo is a special blend of a few very special ingredients, leading to a very balanced and delicious seasoning for rice and other dishes. It contains only ume plums and shiso, which is a classic Japanese flavor combination.Â
Umeboshi (Japanesed pickled plums) are seasoned with shiso (perilla leaf) which are grown in Gujo city, Gifu prefecture. These shiso-seasoned umeboshi are then dried using a traditional method a second time in order to make this furikake. Â
What makes this umeboshi furikake unique from other umeboshi furikake lies in the fact that this particular furikake has an excellent balance of textures. Crushes pieces of dried umeboshi are mixed with umeboshi powder to give this furikake more crunch.Â
